Betty Crocker

I have not been able to update my blog as much as I would like. I have good reason though; thank you college life! ^_^

Here's a recipe I use religiously during college life. Zucchini bread an easy, filling, delicious to-go breakfast food.  It is a wonderful compliment to coffee too! The yeild for this recipe is two loaves of bread. I usually leave a loaf out to eat, and freeze a loaf for those busy weeks I just can't seem to get it together.

Zucchini Bread

Here are the ingredients you will need:
  • 3c all-purpose or whole wheat flour

  • 2c Sugar

  • 1 tsp. salt

  • 1tsp baking soda

  • 1/4 tsp baking powder

  • 3 eggs

  • 1c veggie oil

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1 tsp lemon zest

  • 2c grated zucchini

  • 1/2c walnuts

  •  Two greased loaf pans & preheat oven to 350





  • Mix dry ingredients into a large bowl (flour, sugar, salt, baking soda, baking powder)








    Whisk remaining ingredients in a small bowl (eggs, oil, vanilla, cinnamon, and lemon peel)







    Pour wet ingredients into dry ingredients.


    Stir until moist. Batter will be a little dry until zucchini is added. Extra moisture from the fresh zucchini will add more moisture.





    Stir in grated zucchini and walnuts.








    Pour into two greased loaf pans. Bake at 350 degrees for 55-65 min. or until a inserted toothpick comes out clean.
